Nanxiang Mini Dumpling is well-known home and abroad for over a hundred years.lts initial name was Nanxiang pork-filled steamed bread,later called Guyi Garden Mini Dumpling and now named Nanxiang Mini Dumpling.But it is little known that its becoming famous was related with Guyi Garden.
Eerly in 1871,the boss of Rihuaxuan Cakes shop in Nanxiang town..whose name is Huang Minxian,changed his main business to sell Nanxiang pork-filled steamed bread.Every day he carrued his pork-filled steamed bread to Guyi Garden,which therefore impacted his business.So he refined his bread,changing big to small, filling much stuffing in thin cover,using fine and white flour as cover's material,using lean meat as main stuffing. His stuffing was made as this boiling the pork skin in chicken soup and then freezing it to get aspic ,and using aspic as a part of stuffing for acquiring its delicious,sprinkling few refined sesame for its savory, and also adding some seasonal food like crab meat,spring bamboo shoot and shrimp meat .Each dumpling had at least fourteen pleats and weighted 5 g ,in shape of chufa half transparent,very lovely. When it was taken from bamboo steamer and put on a little dish and punched broken ,you would find a dishful of gray .So,Its thin cover,fresh gravy, tender meat and much stuffing made it famous and unique food sold in Guyi Garden.People called it Guyi Garden Nanxiand Mini Dumpling.
Later on ,someone invited Huang Minxian to Shanghai's City Temple setting up a sales point of Nanxiang Dumpling and a Guyiyuan Garden Dumpling shop at Xizang road ,using the brand of Nanxiang Mini Dumpling .It has kept the great reputation till today.After new china was founded, Nanxiang Mini Dumpling was introduced into intermational market and since then become famous over the world.
